Also known as salad mix and crabsticks, imitation crabmeat is processed from carefully selected minced white fish, or surimi, and mixed with wheat starch and egg white. In it's raw state, surimi is a fish paste, which has no flavour or odour, and is an off-white colour.
The main species of fish used in surimi production is Pollock, an atlantic cod, or Eti Uri, a thread fin bream. Natural crab flavouring, and colouring are added to enhance the taste and apperance of the surimi. The surimi is then extruded to produce minced crabsticks, or pressed into thin sheets, which are then layered and cut to produce salad mix, or rolled to produce filament style crabsticks.
Imitation crabmeat is a low cost, hygenically produced seafood, which is low in fat and cholesterol. |
