S c a l l o p s
Scallops are imported into New Zealand, to supplement the locally produced harvest, which is seasonal between August and October, and demands very high export prices.
The imported product comes from Japan, cultivated in the cold waters off Amoari, near Hokkaido, or China, harvested from the sea around the islands of Dalian. Both products are similar, and produced from the same species, the only point of difference being that the Chinese scallops have a larger roe in comparison to the meat.
The imported product is also seasonal, the harvest taking place in Japan between January and April, and in China, between February and May. Both countries product is harvested from cultivated product, when water temperatures are about 5C, and air temperatures approach zero.

O y s t e r s
The supply of New Zealand Pacific oysters is supplemented by product of the same species, imported from South Korea. This product has been cultivated in South Korea for the last 25 years, with the main exports markets being Japan and the USA.
There are two seasons, January to March, and September to October.
